
For the past two years we’ve been working on the Milbrook project in Abbeyleix, now known as ómós, a new restaurant and guest house led by Chef Cuan Green. Cuan has worked in some of the best kitchens in the world, including Noma in Copenhagen, and that level of experience shows in how carefully this project has been approached. From day one, this has been about doing things properly. The design team care deeply about detail, from the feet on the chairs to the technical lighting integrations, and that attention has shaped every decision along the way.

As lighting designers, our role has been to support that thinking rather than overpower it. The spaces are calm and considered, so the lighting needed to feel the same, controlled, subtle and precise. We’ve spent a lot of time testing, adjusting and refining to make sure the light works with the materials, the layout and ultimately the dining experience. There’s nothing loud about it, but that’s the point. When it’s done well, you shouldn’t notice the lighting; you should just feel comfortable in the space.

ómós is due to open for bookings from the 26th of March, which is always an exciting moment after a long build. It’s been a pleasure to work with a team that values detail and is willing to put in the time to get things right.
